I’ve recently become marginally obsessed with a millennial fave, avocado toast. I am your standard PB hold the J kind of gal, until I stumbled down the rabbit hole that is ripe avocado smothered on toast. The best part – it’s 100% vegan!
Not only is it vegan and can be easily made gluten free, but it is protein and vitamin rich, and notoriously delicious. Avocado toast is the perfect breakfast, lunch, or mid-day snack. It is also an ideal plant-based fuel to get through class or a long rehearsal. I’m sure many of you already share in my love of avocado, but I must share my favorite go to avocado toast recipe with you all! Enjoy!
2 slices of toast (substitute gluten free if necessary)
1 ripe avocado
½ tablespoon coarse sea salt
½ teaspoon ground cayenne red pepper
1 teaspoon vegan butter (I like Earth Balance’s w/ Olive Oil)
Squirt of fresh lemon juice
A small handful of fresh sprouts (I prefer a blend of dill and arugula)
Toast bread. Smear vegan butter onto toast. Slice and smash avocado on toast using a fork, loosely spread. Squirt lemon juice onto toast. Sprinkle with sea salt and cayenne pepper. Add sprouts on top.
